Lemon Dill Chicken Piccata with Cauliflower Mash & Charred Broccoli
This better-for-you twist on a classic swaps heavy cream for a bright lemon dill sauce and pairs tender chicken with garlicky cauliflower mash and crisp charred broccoli. Clean plates guaranteed.
Ingredients:
- 2 chicken breasts, pounded thin
- Salt, pepper, and flour for dredging
- 1 tbsp olive oil
- 2 cups cauliflower florets
- 1 garlic clove, minced
- 1/4 cup non-dairy milk or broth
- 1 bunch broccoli, chopped
- 1 pack Howl at the Spoon Lemon Dill Sauce
- Optional: lemon wedges and capers for garnish
Instructions:
- Season and lightly dredge chicken in flour. Sear in olive oil over medium heat until golden and cooked through. Remove and keep warm.
- Steam cauliflower until tender, then blend with garlic and non-dairy milk until smooth. Season to taste.
- Char broccoli in a hot skillet or oven at 425°F until crispy at the edges.
- Plate chicken over mash and broccoli. Drizzle with Lemon Dill sauce and garnish if using.
