Lemon Dill Chicken Piccata with Cauliflower Mash & Charred Broccoli

This better-for-you twist on a classic swaps heavy cream for a bright lemon dill sauce and pairs tender chicken with garlicky cauliflower mash and crisp charred broccoli. Clean plates guaranteed.

Ingredients:

  • 2 chicken breasts, pounded thin
  • Salt, pepper, and flour for dredging
  • 1 tbsp olive oil
  • 2 cups cauliflower florets
  • 1 garlic clove, minced
  • 1/4 cup non-dairy milk or broth
  • 1 bunch broccoli, chopped
  • 1 pack Howl at the Spoon Lemon Dill Sauce
  • Optional: lemon wedges and capers for garnish

Instructions:

  1. Season and lightly dredge chicken in flour. Sear in olive oil over medium heat until golden and cooked through. Remove and keep warm.
