Grilled Lemon Dill Salmon with Veggies
This summery salmon dish keeps it simple but never boring. Grilled salmon and seasonal vegetables get a bright boost from our Lemon Dill sauce. Serve it al fresco or meal prep it for weekday lunches.
Ingredients:
- 2 salmon fillets
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 cups assorted vegetables (zucchini, bell peppers, asparagus)
- 1 pack Howl at the Spoon Lemon Dill Sauce
- Optional: lemon wedges for garnish
Instructions:
- Preheat grill or grill pan. Rub salmon and veggies with olive oil, season with salt and pepper.
- Grill salmon for 3–4 minutes per side or until just cooked through.
- Grill vegetables until tender and slightly charred, turning as needed.
- Plate with Lemon Dill sauce drizzled over top and a squeeze of lemon if using.
Flavor tip: Add a sprinkle of fresh dill or serve over couscous or cauliflower rice to round it out.
