Grilled Lemon Dill Salmon with Veggies

This summery salmon dish keeps it simple but never boring. Grilled salmon and seasonal vegetables get a bright boost from our Lemon Dill sauce. Serve it al fresco or meal prep it for weekday lunches.

Ingredients:

  • 2 salmon fillets
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups assorted vegetables (zucchini, bell peppers, asparagus)
  • 1 pack Howl at the Spoon Lemon Dill Sauce
  • Optional: lemon wedges for garnish

Instructions:

  1. Preheat grill or grill pan. Rub salmon and veggies with olive oil, season with salt and pepper.
  2. Grill salmon for 3–4 minutes per side or until just cooked through.
  3. Grill vegetables until tender and slightly charred, turning as needed.
  4. Plate with Lemon Dill sauce drizzled over top and a squeeze of lemon if using.
Flavor tip: Add a sprinkle of fresh dill or serve over couscous or cauliflower rice to round it out.
