Al Pastor Quesadillas
  Golden, cheesy triangles filled with bold Al Pastor flavor and finished with a sweet, herby drizzle.
Al Pastor Quesadillas
Sweet heat meets melty cheese in this ridiculously good upgrade to your average quesadilla. Al Pastor adds bold flavor and a touch of spice, while the pineapple gives it a sweet kick. These come together fast and disappear even faster.
Ingredients:
- 4 small flour tortillas
 - 1/2 cup shredded Monterey Jack or cheddar cheese
 - 1 pack Howl at the Spoon Al Pastor Sauce
 - 1/4 cup finely diced red onion
 - 1/4 cup chopped fresh pineapple (optional)
 - Fresh cilantro for garnish
 - Olive oil for cooking
 
Instructions:
- Spread Al Pastor sauce on two tortillas. Top with cheese, red onion, and pineapple if using.
 - Place the remaining tortillas on top to create two quesadillas.
 - Heat a drizzle of olive oil in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and cheese is melted.
 - Cut into wedges and drizzle with more Al Pastor. Sprinkle with fresh cilantro before serving.
 
Flavor tip: Fold extras into lunch wraps or slice into strips and toss on a salad.
