Al Pastor Quesadillas

Sweet heat meets melty cheese in this ridiculously good upgrade to your average quesadilla. Al Pastor adds bold flavor and a touch of spice, while the pineapple gives it a sweet kick. These come together fast and disappear even faster.

Ingredients:

  • 4 small flour tortillas
  • 1/2 cup shredded Monterey Jack or cheddar cheese
  • 1 pack Howl at the Spoon Al Pastor Sauce
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh pineapple (optional)
  • Fresh cilantro for garnish
  • Olive oil for cooking

Instructions:

  1. Spread Al Pastor sauce on two tortillas. Top with cheese, red onion, and pineapple if using.
  2. Place the remaining tortillas on top to create two quesadillas.
  3. Heat a drizzle of olive oil in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and cheese is melted.
  4. Cut into wedges and drizzle with more Al Pastor. Sprinkle with fresh cilantro before serving.
Flavor tip: Fold extras into lunch wraps or slice into strips and toss on a salad.
