Al Pastor Double Baked Potatoes & Black Beans

These loaded potatoes are the ultimate comfort food—crispy on the outside, fluffy on the inside, and stuffed with seasoned black beans, corn, and spices. Finished with our Al Pastor sauce, they’re basically flavor bombs in potato form.

Ingredients:

  • 2 large russet potatoes, baked
  • 1 cup cooked black beans
  • 1/2 cup corn kernels
  • 1/4 cup chopped red onion
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 1 pack Howl at the Spoon Al Pastor Sauce
  • Olive oil, salt, and pepper to taste
  • Optional toppings: avocado, cilantro, lime

Instructions:

  1. Preheat oven to 400°F. Cut baked potatoes in half lengthwise and carefully scoop out the centers into a bowl, leaving a thick shell.
  2. Mix the scooped potato with black beans, corn, onion, cumin, paprika, olive oil, salt, and pepper.
  3. Spoon the filling back into the potato skins and bake for 15–20 minutes until golden and hot.
  4. Drizzle with Al Pastor sauce and top with avocado or cilantro if desired.
Flavor tip: Make it spicy by adding chopped jalapeños to the filling before baking.
