Charred Al Pastor Corn Skewers with Cilantro

These veggie-packed skewers are perfect for the grill and bursting with flavor. Al Pastor adds tangy-sweet heat to every bite, while fresh cilantro brings it back down to earth. A crowd-pleasing side or a fun plant-based main.

Ingredients:

  • 2 ears of corn, cut into rounds
  • 1 red bell pepper, cut into chunks
  • 1 small red onion, cut into chunks
  • 1 pack Howl at the Spoon Al Pastor Sauce
  • Fresh cilantro, chopped
  • Olive oil for grilling
  • Salt and pepper to taste
  • Wooden skewers (soaked in water for 30 minutes)

Instructions:

  1. Preheat grill or grill pan to medium-high heat.
  2. Thread corn, bell pepper, and onion onto soaked skewers.
  3. Brush with olive oil and season with salt and pepper.
  4. Grill for 8–10 minutes, turning occasionally, until lightly charred.
  5. Remove from grill and drizzle generously with Al Pastor. Garnish with fresh cilantro and serve hot.
