Charred Al Pastor Corn Skewers with Cilantro
These veggie-packed skewers are perfect for the grill and bursting with flavor. Al Pastor adds tangy-sweet heat to every bite, while fresh cilantro brings it back down to earth. A crowd-pleasing side or a fun plant-based main.
Ingredients:
- 2 ears of corn, cut into rounds
- 1 red bell pepper, cut into chunks
- 1 small red onion, cut into chunks
- 1 pack Howl at the Spoon Al Pastor Sauce
- Fresh cilantro, chopped
- Olive oil for grilling
- Salt and pepper to taste
- Wooden skewers (soaked in water for 30 minutes)
Instructions:
- Preheat grill or grill pan to medium-high heat.
- Thread corn, bell pepper, and onion onto soaked skewers.
- Brush with olive oil and season with salt and pepper.
- Grill for 8–10 minutes, turning occasionally, until lightly charred.
- Remove from grill and drizzle generously with Al Pastor. Garnish with fresh cilantro and serve hot.
