Al Pastor Sweet Potato & Black Bean Tacos

Hearty sweet potatoes, fiber-rich black beans, and a drizzle of smoky-sweet Al Pastor sauce make these tacos a flavor-packed weeknight favorite. Totally plant-based, totally craveable.

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • Corn or flour tortillas
  • 1 pack Howl at the Spoon Al Pastor Sauce
  • Optional toppings: avocado, cilantro, pickled onion, lime wedges

Instructions:

  1. Preheat oven to 425°F. Toss sweet potatoes with olive oil, cumin, salt, and pepper. Roast for 25–30 minutes.
  2. Warm tortillas and heat black beans in a small saucepan until warm.
  3. Assemble tacos with sweet potatoes, beans, and toppings of choice.
  4. Finish with a generous drizzle of Al Pastor sauce.
Flavor tip: Make a double batch of the sweet potatoes and repurpose into grain bowls later in the week.
