Al Pastor Chicken Tacos with Pineapple Pico
These tacos are a weeknight savior and a flavor bomb in one. Juicy chicken chunks are tossed with our smoky-sweet Al Pastor sauce, then topped with a zippy pineapple pico and creamy avocado. They’re fast, fresh, and absolutely pack a punch.
Ingredients:
- 1 pouch of Howl at the Spoon Al Pastor
- 1 cup cooked chicken breast or thigh, chopped
- 1/2 avocado, sliced
- Small corn or flour tortillas
- Salt & pepper to taste
Quick Pineapple Pico:
- 1/2 cup diced fresh pineapple
- 1/4 cup finely chopped white onion
- Juice of 1 lime
- Pinch of salt
- Optional: chopped cilantro, diced jalapeño
Instructions:
- Warm tortillas in a dry skillet or microwave.
- In a pan over medium heat, toss cooked chicken with the Al Pastor sauce until warm and coated.
- Mix all pineapple pico ingredients in a small bowl.
- Assemble tacos: chicken → avocado → pineapple pico.
- Finish with a squeeze of lime and devour immediately.
