Al Pastor Chicken Tacos with Pineapple Pico

These tacos are a weeknight savior and a flavor bomb in one. Juicy chicken chunks are tossed with our smoky-sweet Al Pastor sauce, then topped with a zippy pineapple pico and creamy avocado. They’re fast, fresh, and absolutely pack a punch.

Ingredients:

  • 1 pouch of Howl at the Spoon Al Pastor
  • 1 cup cooked chicken breast or thigh, chopped
  • 1/2 avocado, sliced
  • Small corn or flour tortillas
  • Salt & pepper to taste

Quick Pineapple Pico:

  • 1/2 cup diced fresh pineapple
  • 1/4 cup finely chopped white onion
  • Juice of 1 lime
  • Pinch of salt
  • Optional: chopped cilantro, diced jalapeño

Instructions:

  1. Warm tortillas in a dry skillet or microwave.
  2. In a pan over medium heat, toss cooked chicken with the Al Pastor sauce until warm and coated.
  3. Mix all pineapple pico ingredients in a small bowl.
  4. Assemble tacos: chicken → avocado → pineapple pico.
  5. Finish with a squeeze of lime and devour immediately.
