Healthy Lemon Dill Salmon and Edamame Bowl
1/4 cup shelled edamame, blanched
1 tablespoon fresh dill, minced
1/2 cup orzo, cooked & cooled
2 tablespoons minced roasted red pepper
2 tablespoons corn, cooked
2 tablespoons spring peas, blanched
1 package Lemon Dill Artisan sauce
3 oz hot smoked salmon, flaked
Handful baby spinach
In a small bowl, add the edamame, dill, orzo, red pepper, corn, peas along with the packet of Howl at the Spoon Lemon Dill and toss to coat. To serve, place the spinach at the bottom on one side to make a bed for the salmon. Place the chunked salmon on top and fill the rest of the bowl with the orzo. You can make the orzo salad ahead of time and chill in the fridge for a day or two.
