Pineapple and chilis create a depth of flavor in this taco meat. Chicken is a great neutral protein that picks up the Al Pastor flavors well.
1 teaspoon olive oil
1 chicken breast, lightly salted on both sides
3 small corn tortillas, homemade preferred
1/2 avocado, diced
1/4 cup pineapple, small dices
Preheat oven to 350 degrees. In an oven-ready pan, heat the olive oil on medium-high heat. Add in the chicken breast and let it cook for 5 minutes or until it naturally unsticks itself from the pan. Flip it over to create a nice sear for another 2-3 minutes. Take the pan and move it into the oven to continue to cook for 10 minutes or until the internal temperature reaches 165F.
Remove the pan from the oven and take the chicken out to rest for 5 minutes minimum. Dice the chicken up and place into a small bowl. Toss the chicken with the Howl at the Spoon Al Pastor sauce and serve with the tortillas and toppings immediately.
